Matar Paneer Samosas

This is a very different form of samosas, normally we have the filling of potatoes in samosas, but I gave a twist to this by filling matar & paneer in the filling.
This dish was my very first recipe that gave me recognition as Poonam Puri in all my food groups. As I owe this to my husband who shared this recipe to me . Preparation time – 30 minutes
Makes – around 20 samosas
Ingredients
250 gms Paneer /Cottage cheese cut in small cubes
1cup green peas boiled
1/2 tsp red chilli powder
1/4 tsp amchoor powder
Salt to taste

Mix all ingredients. The filling should look like the above mentioned picture
Now for the dough
2cups all purpose flour
1/4 tsp ajwain seeds
2tbsp oil for moin
1/4 tsp salt
Now knead these into a soft dough.
Method
* Make small balls out of the dough. Roll them out. Full the filling of matar paneer , shape them like samosas & deep fry them in low

Fry them till golden brown & serve hot with green chutney.Have fun & enjoy.

Paneer – Gulabjamun

Gulabjamun is one of the most favourite dessert of all. Mostly in every occasion there has to be Gulabjamun as dessert . We enjoy them in festivals like Diwali ,Holi,Rakshabandhan,and many more. Toady I shall share the recipe of Paneer gulabjamun.

Here the recipe alongwith recipe follows
Preparation time– 30 minutes | Serves – – 5
Ingredients

  • Paneer / Cottage cheese 250 gms
  • All purpose flour 50 gms
  • Green cardmoms 4-5 crushed
  • Ghee for frying. 3tbsps

For sugar syrup

  • 1cup sugar
  • 2cups water
  • 3-4 strands saffron

Method

  1. Make sugar syrup of the above mentioned ingredients.Boil water & sugar well ,as.it thickens put off the gas and allow it to cool. Add saffron  to it.
  2. mash the paneer & all purpose flour well with your palms ,mix well till it softens. Mix crushed green cardmom to it.
  3. Now make small balls out of this mixture, and fry till golden brown in ghee.
  4. Put these fried balls in the prepared sugar syrup .
  5. Decorate them with julien almonds., this is optional.

Cheese Jalepeno Toast

Toast is one of the best breakfast one relishes. We use bread in many dishes like bread poha, sandwich etc. The recipe I am sharing today is my daughter’ s favourite. We usually have it on weekends.

So here is the recipe.
Preparation time – 30 minutes | Serves – 3
Ingredients

  • 1 whole loaf bread from bakery

For white sauce

  • 1/2 cup maida
  • 1 tbsp butter
  • 1cup milk
  • 4cubes cheese grated
  • Salt
  • 1/2 cup water
  • 1green capsicum diced
  • 2 chopped onions
  • 1/2 cube mozrella cheese grated
  • 1/2 tbsp chilli flakes
  • 3 chopped jalepeno
  • 2tbsp red chilli sauce

Method

  1. Put the butter in a pan , add maida & roast for a while, add milk.and keep on stirring well, orelse lumps will be formed. Put salt and thicken as it becomes like a sauce.. Add grated cheese & mix well.
  2. Get ready made whole loaf bread from bakery. Cut the into even slices, take oil in pan add chopped onions, saute them. * Prepare white sauce by adding roasted maida, grated cheese & little milk.Add capsicum also. Once white sauce is ready add chopped jalepeno, chilli flakes.Put red chilli sauce .Mix well.
  3. Apply this to the bread slice, garnish each slice with grated mozrella cheese.put them in preheated oven .preheat oven for 120degrees for 10 minutes. Toast these slices for 5 mins & serve hot.

Enjoy hot toast with tea or coffee

Parwal Aloo

Parwal in Hindi, as in English it is called and Green gourd or Pointed gourd, is a vegetable having many nutritive values. It is cooked along with potatoes  & is quite tasty also. There is a sweet dish also made of this vegetable known as Parwal ka murrabba, but the recipe that I am going to share is Parwal aloo.

Parwal looks like this. Now let us get back to our recipe. Here we go
Preparation time – 25 minutes | Serves – 3
Ingredients

  • 250 gms Parwal
  • 4-5 potatoes
  • 1/4 tsp cummin seeds
  • 1/4 tsp turmeric powder
  • 1/2 tsp red chilli powder
  • 1/4 tsp dhania powder
  • 1/4 tsp amchoor powder
  • Salt to taste
  • 3tbsp oil

Method

  1. Cut the Parwal into long slices not too thin, even cut the potatoes also lengthwise.
  2. Now take oil in pan , put the cummin seeds, as they splutter put Parwal, all spices & cook in medium flame.
  3. When both the vegetables are tender cook for a while & put off the flame.

Your Parwal Aloo is ready ,you can relish it with Dal Chawal as a side dish.

Punjabi masala Vadiyan

Today the recipe I am sharing is one of my favourite dish , these are Punjabi masala vadiyan. We usually get them in Punjab, full of spices, made of white urad dal, with black pepper, Red chilli powder, salt, fennel seeds ,& many other spices.

They look like the above picture, full of aroma & lovely flavours. Here goes the recipe
Preparation time – 20 minutes | Serves- 4
Ingredients

  • 2 vadiyan crushed little
  • 2 potatoes cut in medium cubes
  • 3. fresh tomato paste
  • 1tsp ginger garlic paste
  • Salt to taste
  • 1/4 tsp turmeric powder
  • 1/2 tsp red chilli powder
  • 1.4 tsp dhania powder
  • A pinch of garam masala
  • 2 tbsp oil
  • 1 cup boiled green peas

Method

  1. First take oil in cooker. Add the vadiyan, fry them till brown & take them out.
  2. Now add ginger garlic paste, fresh tomato paste & all spices, fry the well .
  3. Add potatoes, boiled peas,vadiyan, 2cups water, & take 3 whistles close the flame of gas. Your vadiyan are ready.

Enjoy my favourite dish with steamed rice.

Dahi Chicken

Dahi chicken / Curd chicken is a delicacy of non veg in which ,it us very obvious as it’s name main ingredient is curd & of course chicken. This is my husband’ s recipe. Onions are not used in this recipe ,yet the flavours of other spices come out very well,which gives a very different aroma to the chicken.

Let us start
Preparation time – 1 hour | Serves – 3
Ingredient

  • 750 gms chicken
  • 1 cup whisked curd
  • 1.5 tsp ginger garlic paste
  • 5 fresh tomato paste
  • 1/2  tsp turmeric powder
  • 1  tsp red chilli powder
  • 1.5 tsp dhania powder
  • 1 tsp cummin seeds
  • A pinch of powdered garam masala
  • Salt to taste
  • Oil for frying chicken
  • 2tbsp oil

Method

  1. Fry the chicken to light golden brown.
  2. Take 2 tbsp oil from this oil only in a handi, now add ginger garlic paste & fry it golden brown.
  3. Add all the spices ,fry a little, put the fresh tomato puree, cook well.
  4. Add chicken to it after 5 minutes add the whisked curd. Cook till chicken is tender , adjust the gravy accordingly.Sprinkle a pinch of powdered garam masala. Serve hot with lachcha paratha & enjoy the lovely flavours of the chicken as I did.

Matar ( Green peas ) Paratha

Paratha, as I had mentioned earlier are of many types. Myself being a Punjabi have weakness for parathas.,any sort of paratha can be liked by me ,be it paneer, aloo, onion, or any . The recipe I am sharing today is matar paratha. Paratha with the filling of matar or green peas. So let me share my recipe with all of you.

Preparation time – 30 minutes | Serves- 3
Ingredients

  • 1cup boiled peas , slightly mashed
  • 2 cups whole wheat flour
  • Salt to taste
  • 2chopped onions
  • 1/2 tsp red chilli powder
  • 1/4 tsp turmeric powder
  • 1/2 tsp dhania powder
  • A pinch of garam masala
  • 2tbsp oil for filling
  • 5tbsp oil for parathas

Above picture shows the filling of the paratha.
Method

  1. Take oil in pan ,add chopped onions and fry a little
  2. Add all spices, salt & mashed boiled peas
  3. Toss well & add garam masala , put off the flame. Keep filling aside, allow to cool.
  4. Knead the flour in medium texture.
  5. Now accordingly take a small ball from the kneaded flour , fill in the filling ,roll out parathas & shallow fry the parathas

Serve hot with butter or curd as you wish .I love to have it with curd.
