Chicken biryani

This delight is a flavourful mouthful in each bite. You can make it ahead on special days and heat by placing the serving dish on a tava.



Preparation Time:- 6 hours | Cooking Time:- 30 | Feeds:- 3 people


For the Marination

  • 650-700 gms chicken
  • 500 gms thick curd
  • 2 tsp Turmeric powder
  • 1 tsp Red chilli powder
  • 1.5 tsp Salt
  • 2 tsp Dhania powder
  • 1 tsp Garam masala
  • 1 tbsp Ginger garlic paste
  • 1 tsp Lime juice
  • 2-3 TSP oil
  • 1 spring of mint leaves
  • 1 chopped green chilly

For the tempering

  • 1 tbsp oil
  • 1 green chilly
  • 1 medium size onion sliced
  • 1-2 mace leaves/javitri
  • 3-4 cloves
  • 1 inch cinnamon
  • 5-6 whole black peppers
  • 2 bay leaves

For the rice

  • 400 gms basmati rice
  • 2 tsp ghee
  • 2 tsp salt

  1. Score the chicken with a knife so that marination goes in.
  2. Make a paste of marination ingredients and rub well on the chicken.
  3. Add mint leaves & chopped green chillies
  4. Cover the chicken with curd over it properly for 5 -6 hours . DO NOT mix only spread the curd on the chicken.
  5. Take oil in handi/wok add whole spices cloves,cinnamon ,whole black pepper, bay leaves, javitri. Let them crackle.
  6. Add the chicken , cook till tender on slow fire.
  7. Fry some julienne onions golden brown for garnishing the biryani.
  8. Boil rice with ghee and salt. Drain the rice and keep aside.
  9. In serving dish, alternate layers of rice and chicken.Add some fried onion in the layers too.
  10. Open lid & serve
