Aloo bati, Dal,Churma laddoo,Buttermilk, Kachumber salad

After I got married in Udaipur, I embraced the local food and learnt to make it and keep the family nourished. After all local food is everyone’s first choice.

Bati is a Rajasthan’s delicacy. These are round balls made of whole-wheat flour with salt & ajwain seeds., and are cooked  either in gas tandoor or oven. My family loves to have these baatis with filling of potatoes, which gives a different twist.After these baatis are done they are dipped in ghee to give them lovely flavours.

Here is the method for Aloo bati

Aloo bati

Preparation Time:- 20 minutes | Cooking Time:- 35 minutes | Makes:- 20 baatis

Ingredients:

  • 3 cup wheat flour
  • 405 medium size potatoes boiled and mashed
  • 2 tsp ajwain
  • 2 tsp salt for dough
  • 2 tbsp oil for moin
  • 1.5 tsp red chilly powder
  • 1 tsp amchoor powder
  • Salt

Method:

  1. Boil potatoes. Mix red chilli powder, salt,amchoor powder, and mix well.
  2. Take whole wheat flour add little oil, salt,ajwain seeds, and knead a soft dough. Keep it covered for 20 min and set aside.
  3. Make 20 balls out of the dough. Stuff it with the potato mixture.
  4. Cooking them either in oven at 180C for 30 min {brush with oil at half the time]or in gas tandoor for 25 min
  5. When done toss in ghee & serve hot with dal

Aalu Baati

Dal:

Preparation Time:- 30 min | Cooking Time:- 15 min | Feeds:- 3 people

Ingredients

 

  • 1.25 cup Panchmel dal [White urad, Yellow moong, Orange masoor, Chana dal and Tuar dal- 1/4 cup each]
  • Salt
  • 1.5 tsp turmeric powder
  • 1/2 tbsp ghee
  • 2 tsp jeera
  • pinch of heeng
  • 1 tsp red chilly powder
  • chopped corriander
  • 2.5 cups Water

Method

  1. Boil all the dal with salt & turmeric powder. 2 whistles on full flame and keep gas on medium for 5-7 min.
  2. Now take ghee in pan, add jira ,hing, red chilli powder.
  3. Add this tempering to the dal.
  4. Garnish with green coriander.

Chaas or Buttermilk

Preparation Time:- 5 min | Cooking Time:- 5 min | Feeds:- 3 people

 

Buttermilk is made  of curd with water.

Ingredients:

  • 8 tbsp curd
  • 3 glass cold water
  • pinch of cumin powder
  • Rock salt to taste

Method:

  1. Churn all the ingredients well in mixer.
  2. Serve Buttermilk/Chaas cold.
    This goes well with Aloo bati & Dal.

Chaas

Kachumber salad

Preparation Time:- 20 min | Cooking Time:- 15 min | Makes:- 10 laddos

 

This is a green salad ,but all the ingredients are finely chopped.

Ingredients:

  • 1 cucumber
  • 2 tomatoes
  • 1 onion
  • Lemon Juice
  • Salt and Pepper

Method:

  1. Chop all vegetables finely.
  2. Add lemon juice and. salt ,pepper and mix well.

Kachumbar Salad

Churma ladoo

 

Preparation Time:- 15 hours | Cooking Time:- 15 min | Makes:- 10 laddos

Ingredients:

  • 6-7 cooked baatis- Pound them in a processor
  • 1/4 cup powdered sugar
  • 10-12 raisins/kishmish
  • 10 chopped almonds/badam
  • 10 chopped cashews
  • Melted ghee

Method:

  1. Add sugar to the crushedbaati and add powdered sugar.
  2. Add raisins, finely chopped badam, chopped kaju.
  3. Add only enough melted ghee to bind them together.
  4. Make ladoos out of them.

The whole combination of Dal Bati,Churma ladoo,Kachumber salad, & Buttermilk is loved by my whole family.
Normally I prepare this on weekends and as we enjoy ,hope you too will enjoy
