Previously i had shared my recipe of Chicken Biryani ,similarly today i am sharing the recipe of Mutton Biryani.This biryani also is same as the chicken one. Mutton & rice both are cooked seperately then assembled in layers.
So here we go
Preparation Time:- 6 hours | Cooking Time:- 30 | Feeds:- 3 people
For the Marination
1 kg mutton500 gms thick curd2 tsp Turmeric powder1 tsp Red chilli powder1.5 tsp Salt2 tsp Dhania powder1 tsp Garam masala1 tbsp Ginger garlic paste1 tsp Lime juice2-3 TSP oil1 spring of mint leaves1 chopped green chilly
For the tempering
1 tbsp oil1 green chilly1 medium size onion sliced1-2 mace leaves/javitri3-4 cloves1 inch cinnamon5-6 whole black peppers2 bay leaves
For the rice
400 gms basmati rice2 tsp ghee2 tsp salt
Score the mutton with a knife so that marination goes in.Make a paste of marination ingredients and rub well on the chicken.Add mint leaves & chopped green chilliesCover the mutton with curd over it properly for 5 -6 hours . DO NOT mix only spread the curd on the mutton.Take oil in handi/wok add whole spices cloves,cinnamon ,whole black pepper, bay leaves, javitri. Let them crackle.Add the mutton , cook till tender on slow fire.Fry some julienne onions golden brown for garnishing the biryani.Boil rice with ghee and salt. Drain the rice and keep aside.In serving dish, alternate layers of rice and mutton.Add some fried onion in the layers too.Open lid & serve.
