Vaangi Bhaat or Brinjal Pulao is a Maharashtrian delicacy. It is normally cooked Pulao with Brinjal & you can add Corn also as it is optional. Enjoy my recipe I’m sure you will definitely relish it. A twist with boiled peas & boiled corn added to the bhaat.
Just have a look at the recipe with ingredients – method
First you wash 2cups or basmati rice & keep aside with 4cups of water in it for 1/2 an hour.
Now take 2tbsp oil in a cooker . Put 1 bay leaf,1 cinnamon stick,4 cloves& 2 chopped onions ,fry till golden brown. Now add 2 chopped tomatoes,1 cup boiled corn, 1/2 cup boiled peas,4 brinjals slited & deep fried,1 tsp turmeric powder,1 tsp red chilli powder,soaked rice alongwith the water. Add salt to taste. Close the lid of cooker & after 1 whistle put off the gas. After 10 minutes open the lid your delicious Vangi Bhaat with corn is ready. As i mentioned earlier corn are optional. Enjoy it.
