Masala Baigan 

Masala Baigan or Shares baigan as it is normally known is a very famous & popular dish, but there are different ways of cooking it. Masala is normally the same,but I cooked it in mustard oil, which gives a lovely flavour to the baigan or eggplant. Just have a look at the recipe.

Take half kg small baigan,make four slits.Now take 1tsp each red chilli powder,turmeric powder,coriander powder,amchoor powder,salt to taste. Mix all the spices & stuff them in slited Baigan. Now take 3 tbsp mustard oil in pan, put the baigan in it & cook in low flame till tender. Serve hot with paratha when done.
