Baigan Bharta 

Baigan bharta is made in many ways. It is one of the favourite dish from  Punjabi . Punjabis simply love it either with missi roti or lachcha paratha. 

Normally the Baigan  / Eggplant is roasted in gas to give it a smoky flavour, but I tried making it today on a simple pan. goes the recipe

2 medium sized round baigan peeled & diced

2chopped onions 

3chopped tomatoes 

2 tbsp ginger garlic paste 

1cup boiled frozen peas (green fresh peas in winter)

1tsp red chilli powder 

Salt to taste 

2cups water

1tsp garam masala 

Now take 2tbsp oil in pan. Add the ginger garlic paste, chopped onions,saute them. Now add chopped tomatoes,spices& fry well. As tomatoes are done put the baigan pieces in it alongwith the water. Close the lid of the pan. After 10 minutes open the lid ,as the baigan gets tender, mash it with a masher, now add the boiled peas & fry for a while. Then add garam masala serve hot with Dal Chawal or Lachcha Paratha.A typical Punjabi food combo.
