Arbi is a truly fantastic vegetable. It is mostly fried & then prepared. But I have just boiled it a little bit then fried it & served it with all spices &besan / garam flour.
Take half kg arbi of big size. Boil them in pressure cooker taking 2whistles only.Peel them & cut them lengthwise.
Now take oil in pan & deep fry these arbi pieces into golden brown. Take 2tsp oil in pan ,put 1tsp ajwain seeds,heeng & add the fried arbi,adding 1tsp each of Red chilli powder,amchur powder,salt to taste. Mix well then sprinkle 3tsp besan & toss well. Your Besan Arbi is ready.
