This is a combo famous in U.P, as my masarji used to prepare this Veggie Poha ,that he used to call as Subz – e- Poha. This delicacy is relished with bathue ka raita.
You can also try this delicacy. Just have a look.
For Subz – e – Poha
Chop the vegetables of your choice. As I have chopped 1carrot,1green capsicum ,2onions, 2tomatoes,half cup green peas,1 medium sized brinjal,2potatoes. Keep them aside.
Take 2tsps oil in handi, put 1tsp rye then add the chopped onions,fry a little, add all the vegetables, add the spices 1tsp each, red chilli powder, turmeric powder, salt to taste,dhania powder,& a pinch of homemade garam masala.
Now add 3cups water ,boil well then take 1cup Poha (dry) & put in this, stir well till water gets dried up. Sprinkle green coriander & serve hot with bathue ka raita.
For the raita.
Take 1 bundle of bathua saag , chop it & wah well. Boil it & grind it to paste.
Take 1cup whisked curd add the paste & half TSP red chilli powder,& bhuna jira powder,rock salt to taste . Mix well & serve with the Poha & enjoy
