Arbi is such a vegetable that when it comes in contact with water it becomes very sticky. Therefore there is a trick to cook it.
First take 7-8 pieces of medium sized arbi. Put them in the cooker & take 2 whistles only. It should be semi solid, now peel them & cut them into two.
Now deep fry them till golden brown. Keep aside. Take 2 tsp oil in pan ,put 1tsp ajwain seeds & Heeng.,add 1tsp red chilli powder,salt to taste ,1tsp amchur & fried arbi. Mix well & serve with Paratha.
