Today I tried a very rare combination of veggies, corn cooked with Aloo & Baigan. To my surprise the dish came out to be an awesome delicacy to be enjoyed as side dish with Dal Chawal.Do try it your family will also relish as mine.
Here goes the recipe
250 gms Baigan cut in cubes
2potatoes peeled and cut in cubes
1cup American corn boiled
1tsp each red chilli powder, turmeric powder,dhania powder
Salt to taste
A pinch of garam Masala
Take oil in pan ,add the vegetables & spices ,let it cook till tender in low flame, when done add garam Masala & serve hot with Dal Chawal.
