Raw mango instant pickle

Raw mangoes pickle is everyone’s favourite. We wait for a year for them to arrive.

This recipe is made in 10 min and hardly needs time to mature.

Instant Mango Pickle

This recipe of mine is dedicated to my both daughters
Preparation time- 15 minutes | Serves- 5
Ingredients

  • 1/2 kg raw mangoes
  • 1tsp red chilli powder
  • 1/4 turmeric powder
  • 1/4tsp mustard seed
  • Salt to taste

Method

  1. Cut raw mangoes into small pieces.
  2. Take oil in pan for tempering ,add mustard seeds, as they splutter add the spices
  3. Mix this tempering to the mangoes and mix well
  4. It keeps well for 10 days in an air tight container in the fridge.

Nimbu Mirchi Achaar/Lemon Green chilli Pickle

We all love pickles. As there are so many types of pickles , at times it is very difficult to choose your favourite one. My favourite pickle is nimbu mirchi achar, the recipe of this pickle is a legacy I inherited from my mother, who is no more but whenever I make this pickle, it is in my fondest remembrance.

Preparation time 20 – 25 days approximately

Ingredients

  • Half kg nimbu /lemon
  • Half kg green chillies
  • 100g methidana / fenugreek seeds
  • 100g saunf / fennel seeds
  • 100g kalonji / onion seeds
  • 1tsp Red chilli powder
  • 1tsp Turmeric powder
  • 2 tsp Salt
  • 100g rai / mustard seeds

Method

  1. Coarsely grind the whole spices.
  2. Cut lemon into 8 pieces, cut green chillies into half, mix all spices with lemon & green chillies.
  3. Mix the spices well. Now put this achar/pickle in glass jar.
  4. Add vegetable oil till lemon & chillies are well dipped. Now regularly keep the achar in the sun for 20- 25 days.

Your achar is ready.
