Chicken Burger & French Fries

Burger by its name sounds fantastic, preparing the chicken patty & French fries at home all by yourself gives immense pleasure. So today even I decided to prepare all by myself with the help of my daughter Priya Puri.

So here goes the recipe
Preparation time 45 minutes | Serves- 3
Ingredients

  • 6 buns readymade from the bakery

For chicken patty

  • 5 pieces of chicken boiled & shredded
  • 4 tbsp ceasar salad dressing
  • 2onions chopped
  • 3 green chillies chopped
  • 4strands green coriander leaves chopped
  • 1/2 tsp red chilli powder
  • Salt to taste
  • 1 tsp tobasco sauce

For French fries

  • 4 potatoes cut lengthwise

Method:

  • Mix all the ingredients for the chicken patty and make flat discs.

  • Flatten them like shown in picture & deep fry it.

  • Now your chicken patty is ready.
  • Take the buns,cut them into halves, apply butter & toss them in a heated pan.
  • Now place the bun apply little tomato sauce, place one piece of onion slice, then chicken patty, one more onion slice then the top of bun .Now this is ready to be eaten
  • Enjoy them with French fries, Tomato sauce & mustard sauce.
  • Fry these potatoes fries till golden brown , sprinkle salt & pepper to taste.

Sabudana / Sago Tikki

Sabudana or sago is usually eaten during fast. We all Indians consume this sabudana by making different recipes some ,sweet , some salty &some crunchy. The recipe of mine has a crunchier taste ,& is spicy too.
Note down the crunchy recipe
Preparation time– 30 minutes | Serves– 4
Ingredients

  • 2cups sabudana soaked for 4-5 hours
  • 4boiled& peeled potatoes
  • 3 green chillies chopped
  • 4-5 strands of green coriander leaves chopped
  • 1/2 cup roasted peanuts crushed
  • Salt to taste
  • 1/2 tsp red chilli powder
  • A pinch of black pepper
  • 1/2 cup bread crumbs
  • 4 tbsp oil for frying

Method

  1. Mix boiled potatoes with sabudana. Add all spices alongwith bread crumbs, crushed peanuts, green chillies & green coriander.
  2. Now make small balls & flatten them in your palms, shape them like tikkis. Serve hot with green chutney or tomato sauce, as you wish & ENJOY

You can eat this during fasts too; add rock salt or sendha namak and pepper only.

Stir Fry Idli

Many times there are left over idlis after the meal. Here is a quick recipe to make it more  interesting.

Preparation time – 30 minutes | Serves – 3
Ingredients

  • 10 idlis
  • 6-7 curry leaves – cut
  • 2 tsp urad dal
  • 1 tsp mustard seeds/rai
  • 1 tsp haldi/turmeric powder
  • red chilly powder and salt to taste
  • Lemon juice to taste
  • 2 tsp oil
  • water

Method:

  1. Cut the idlis and keep aside.
  2. In a non stick pan, heat oil. Add mustard seeds and urad dal. Let the dal become golden.
  3. Now add the curry leaves and spices.
  4. Toss in the idli and splash some water if needed.
  5. Leave it on slow heat for sometime so that it can get crisp on one side if you like.
  6. Put some lemon juice and serve hot.

Paneer Tikka

Paneer tikka is a very tempting & quite relishing dish. Today I shall share my recipe with you all. It is made from paneer/ cottage cheese, as the name suggests.
This delicacy is loved by my family. In every get together at my house this dish is a must, there has to be Paneer tikka in the menu.

For vegetarians this is the most commonly ordered dish at restaurants. However it is easily doused in loads of oil. This version is high on flavour and is made with real ingredients easily available at home.

So here my recipe follows
Preparation time– 2 hours | Serves- 4
Ingredients

  • 1 kg paneer / cottage cheese
  • 2 tbsp ginger garlic paste
  • 1 tsp red chilli powder
  • 1 tsp turmeric powder
  • 1/2 tsp garam masala
  • Salt to taste
  • Chaat masala to sprinkle
  • 250 gm whisked curd
  • 2onions cut in big pieces
  • Tomato and capsicum pieces- Optional

Method

  1. Cut paneer into big cubes, marinate in whisked curd along with red chilli powder, turmeric powder, garam masala, & salt. Leave it aside for an hour.
  2. Now heat the gas tandoor/baebeque/non stick pan/Oven, take steel/wodden skewers and first apply little oil then alternatively one piece paneer ,then one piece onion and pierce them.
  3. Place in gas tandoor & keep on turning them & cook till the colour of paneer changes to brown.
  4. Take out from skewers and apply chat masala & serve hot.

Serve hot& enjoy

Notes:

1. Pre heat oven to 180C for 15 min and place the tikkas on a tray lined with foil. Balance the skewers so that they hand on the foil and not touch it completely. Turn them half way. It should take 15-20 min in the oven. Keep oiling them with brush.

2. Oil the grill of the barbeque and gas tandoori before placing the tikkas

3. Fresh Malai paneer is the best for this dish.

4. If you are making this in a non stick pan, heat it up well and place the tikkas on very less oil and roast it off. You can also add the onions and capsicums to the pan. Please be sure to now crowd the pan else you will land up making a curry. Turn the tikkas with the help of chimta/tongs.

Veg noodles

Noodles mean a lot to me. I am just crazy for Chinese, be it noodles ,or fried rice, manchurian. Since my childhood I remember I used to go to eat Chinese food with my brother, who is 11 yrs elder to me, as he is a fatherly figure to me. Since then I can keep all food aside and make way for indian-chinese 🙂

Preparation time – 30 mins | Serves 3

Ingredients

  • 1 pkt noodles- 200 gms ching’s I use.
  • 1 tbsp red chilli sauce
  • 1 tbsp green chilli sauce
  • 1 tbsp soya sauce
  • 3-4 pods of garlic crushed
  • 2 small carrots cut in thin strips
  • 1/2 cup cabbage shredded fine
  • 2 medium sized onions sliced fine
  • 1 big green capsicum cut in strips
  • Salt to taste- Be careful as soya souce has salt.
  • 1 tbsp oil + 1 tbsp
  • 1/2 tsp chilly vinegar

Method

  1. Boil noodles well, strain the water and wash in running water to remove the starch and preservatives.
  2. Add 1 tbsp oil to the noodles to avoid sticking.
  3. Take 1 tbsp oil in pan. add crushed garlic saute for a while and then add onions, fry it well.
  4. Now add the salt & vegetables, and let them be tender . this should take 10 min or so.
  5. Add chilli sauces & soya sauce followed by noodles. Mix well & serve hot.
  6. I add chilly vinegar just when it is about to be done. It gives a nice sharp taste.

I enjoyed making it and then relished it a lot. Hope the same with you too.

Matar paneer samosas

Paneer or cottage cheese is everyone’s favourite. As it is made from milk, it is healthy also.
This was my very first dish I tried going out of the way. Normally in veg you get samosa with potato filling, & in non veg  you get chicken samosas. So I gave it a try to make with paneer( cottage cheese ) & green peas.

So here we go

Preparation Time:- 20 mins | Cooking Time:- 15-20 mins | Makes:- 15 Samosas

Ingredients:

  • 250 Grams all purpose flour/maida
  • 1cup paneer cut in cubes / cottage cheese
  • 1cup boiled peas
  • 1tsp red chilli powder/lal mirchi powder
  • 2tsp chat masala

  • 1tsp amchoor/dry mango  powder
  • Salt to taste
  • 2tbsp oil for moin
  • Oil for frying
  • Ajwain seeds

Samosa Filling
  1. Cut paneer into small cubes.
  2. Boil the peas.
  3. Add red chilli powder, salt,amchoor powder to this & mix well.
  4. Take maida /all purpose flour add 2-3 tbsp oil ,little salt , ajwain seeds and                 knead a soft dough. Keep it aside for 20 min.
  5. Now roll out for samosas fill in the filling & deep fry them in low flame.

Fry them till golden brown on medium flame. Serve hot with tomato sauce or green chutney. & Enjoy

Dahiwada

For as long as I have been married, I have been making dahi wadas for holi. They are easy to eat and they give a refreshing feeling in the heat. This recipe is one of the easiest versions and is 100% mom-approved 🙂

Dahiwada is a delicacy made from dal wadas along with curd. This is relished mostly by everyone.

Preparation Time:- 7 hours | Cooking Time:- 45 mins | Makes:- 15 wadas

Ingredients:

  • 250 gm white urad dal/skinless urad dal
  • 1 kg whisked curd
  • Bhuna jira powder/ Roasted cumin powder
  • Red chilli powder/ Lal mirch powder
  • Salt/namak
  • Green coriander/Dhaniya
  • Imli chutney ( optional)

Method:

  1. Soak white urad dal for 5 – 6 hours.
  2. Grind it to fine paste.
  3. Make wadas out of the paste.
  4. Soak them in water and squeeze them, keep aside
  5. Now take whisked curd,add salt & red chilli powder.
  6. Place these wadas in a plate.
  7. Pour the curd on top of wadas. It tasted better with cold curd.
  8. Decorate with red chilli powder, bhuna jira powder, garnish with green coriander.

You can add imli chutney also ,that’s optional.
